ah dear paid subscribers, i’m sorry it’s been so long since you’ve gotten a special recipe. thank you for bearing with me over the last few months. the below is one that was a crowdpleaser at supper clubs (tbt to life BeforeCancer when i still held those!). this dish was beloved by century egg newbies and eggplant haters alike!

what is a century egg?

a century egg (皮蛋, pídàn) is a preserved egg that has been cured in a mixture of clay, ash, and salt for several weeks to months. the egg white turns into this brown, translucent jelly, and the yolk becomes this creamy grey color. they’re savory, filled with umami, and a little funky to newbies.
