what is a century egg?
a century egg (皮蛋, pídàn) is a preserved egg that has been cured in a mixture of clay, ash, and salt for several weeks to months. the egg white turns into this brown, translucent jelly, and the yolk becomes this creamy grey color. they’re savory, filled with umami, and a little funky to newbies.
